Ammonium Bicarbonate (NH₄HCO₃) is a white crystalline salt with weak alkalinity in solution. Its most defining chemical property is thermal instability; it readily decomposes above 36°C into ammonia (NH₃), carbon dioxide (CO₂), and water vapor (H₂O), leaving no residue. It reacts with acids, producing a salt and releasing CO₂ gas. It also reacts with alkali metal hydroxides. This compound is not stable in moist air, gradually losing ammonia and carbon dioxide, which leads to its decomposition.

During the high-temperature processing, NH₄HCO₃ decomposes completely, releasing ammonia and carbon dioxide gas. These gases become trapped within the viscous material, generating a uniform, fine, and closed-cell foam structure.
