Fermentation method
The main way of fermentation is to adjust the pH value of about 5 under the action of lactic acid bacteria, and ferment for 3-5 days to obtain crude lactic acid.
The raw materials of fermentation are generally starch raw materials such as corn, rice and sweet potato (there are also alfalfa and cellulose as raw materials, and some studies have proposed recycling kitchen waste and fish body waste to produce lactic acid). There are many lactic acid bacteria that can produce acid in lactic acid fermentation stage, but there are not many with high acid quality, mainly rhizopus and Lactobacillus. Different strains have different fermentation pathways, which can be divided into homotype fermentation and heterotype fermentation. In fact, due to the existence of other physiological activities of microorganisms, it may not be a simple fermentation pathway.

Synthesis method
Synthesis methods for the preparation of lactic acid include lacto-nitrile method, acrylonitrile method, propionic acid method, propylene method, etc., and only lacto-nitrile method (also known as acetaldehyde hydrocyanic acid method) and acrylonitrile method for industrial production.
(1) Milk nitrile method
Lacto-nitrile process is to continuously feed acetaldehyde and cold hydrocyanic acid into the reactor to produce lacto-nitrile (or directly use lacto-nitrile as raw material), and pump the lacto-nitrile into the hydrolysis kettle, inject sulfuric acid and water, so that lacto-nitrile hydrolysis to obtain crude lactic acid. Then, the crude lactic acid is sent to the esterification kettle, and ethanol is added to esterify, and then refined lactic acid is produced by distillation, concentration and decomposition. Both Sterling Chemical Company in the United States and Musashino Chemical Company in Japan used this method to synthesize lactic acid.
(2) acrylonitrile method
Acrylonitrile process is to send acrylonitrile and sulfuric acid into the reactor for hydrolysis, and then send the hydrolysate into the esterification reactor to react with methanol; After separating the ammonium bisulfate, the crude ester is sent to the distillation column, and the refined ester is obtained at the bottom of the column. Then the refined ester is sent to the second distillation column, heated decomposition, the bottom of the tower to produce dilute lactic acid, vacuum concentrated product.
(3) Propionic acid method
The propionic acid process uses propionic acid as raw material to obtain crude lactic acid through chlorination and hydrolysis. After esterification, rectification and hydrolysis, the product is obtained. The raw material price of this method is more expensive, and only a few manufacturers such as Japan Grand Road Company use it.
