Ammonium bicarbonate
Ammonium bicarbonate decomposes endothermically when heated, making it a leavening agent in baking (no residual alkalinity). It reacts with acids (e.g., citric acid) to release CO₂, and with strong bases (e.g., NaOH) to form ammonia gas. In water, it undergoes hydrolysis (NH₄⁺ + HCO₃⁻ ⇌ NH₃ + H₂CO₃). As a food additive (E503), it is non-toxic (LD50 >2,000 mg/kg, oral rat) and GRAS-certified (FDA).
